It is the youngest vineyards of I Clivi that give rise to Ribolla Gialla, one of their most surprising products, both in the dry and sparkling version. The hand-picked bunches are pressed whole, without destemming. The must is then pumped into stainless steel tanks where during the night the coarsest parts decant by gravity. After a few hours the natural fermentation begins, without the addition of yeasts. At the end of the process, the wine ages in steel on its own fermentation tanks from 6 to 8 months depending on the vintage. Nutritional values: 100 ml: E = 330 KJ 79 Kcal
In the glass it is a heavy straw yellow, with a nose that plays on the subtlety of the yellow flower and a full-bodied citrus note. A light, dry palate with minerality and freshness.
A white wine to be enjoyed every day, at the centre of the table, to accompany excellent fish dishes and crustaceans, but also first courses of medium structure.
To fully appreciate the style, this wine should be served at a service temperature of 10/12°C.
