TASTING NOTES

It is the youngest vineyards of I Clivi where Ribolla Gialla is produced, one of their most surprising products, in both dry and sparkling versions. The hand-picked grapes are pressed whole, without destemming. The must is then pumped into stainless steel tanks where the coarser parts decant by gravity overnight. After a few hours, natural fermentation begins, without the addition of yeast. At the end of the process, the wine matures in stainless steel on its own fermentation deposits for 6 to 8 months depending on the vintage. In the glass it is a deep straw yellow and on the nose it plays on the subtlety of the yellow flower and a full-bodied citrus note. Light and dry in the mouth, it also has a minerality and freshness. THE WINERY

I Clivi

Very old and mostly indigenous vines are to be found in the vineyards of i Clivi, a point of reference in the production of Ribolla Gialla in Friuli Venezia Giulia. Most are between 40 and 60 years old, but in some plots there are specimens not far from a century old. Sinking their roots into sandstone soil, they have a low yield per hectare, which guarantees the natural concentration and complexity of their fruit. Guarding such an important heritage, the Zanusso family has made territoriality and longevity the keywords of its business since 1996. The property's twelve hectares are divided into two DOC zones with different microclimates and are cultivated with different varieties: Ribolla Gialla, Friulano, Verduzzo and Malvasia. In the I Clivi winery, the grapes are processed avoiding the use of machinery as much as possible in order to preserve their integrity and uniqueness. The result of such finesse are white wines and sparkling wines with great personality and character, yet at the same time as light as a caress for the palate.
