TASTING NOTES

Production

A small winery that perfectly reflects the personality of its owner: Stefano Novello. Contemporary and unconventional labels for the wines of the Ronco Severo winery, which embrace organic farming principles and are crafted with respect for nature. Ribolla Gialla IGT Venezia Giulia is made from 100% Ribolla Gialla grapes, with vines rooted in the marl-clay soil of Friuli, known as ponca. Harvesting is carried out strictly by hand, with the grapes picked when fully ripe and subjected to a double sorting process in the winery. This is followed by crushing, destemming, spontaneous alcoholic fermentation and ageing in Slavonian oak barrels for around 11 months in contact with the lees. The wine is then left to mature for a further 15 months or so in the same barrels.

Organoleptic Characteristics

Deep yellow colour with golden highlights. Intense aroma, with distinct floral, dried fruit and citrus notes. A slight mineral note that becomes more pronounced in mature wines. On the palate, a wine with good acidity typical of Ribolla Gialla, slightly tannic and savoury.

Occasion and Pairing

A spicy finish, ideal with fish dishes served with delicate sauces, or with medium-aged cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 12–14°C.

Ronco Severo

The Rossetti e Scrivani winery is located in Oltrepò Pavese, in the heart of the Pinot Nero territory. Over time, the company has been able to select the best locations in the area to exclusively cultivate this precious variety, and has worked hard to cultivate it to the best of its ability. Study, dedication, passion and commitment have led it to always seek out different, ingenious and innovative techniques to accompany the oldest traditions of local viticulture. Thanks to constant work, the company has managed to make Pinot Noir its strong point, and the main ingredient in its sparkling wine production. A love for the land, combined with unique cultivation and vinification techniques, has ensured that the company has managed to distinguish itself and become one of the most interesting producers in the production of the highest quality Lombardy wines.
