TASTING NOTES

Production

A small winery that perfectly reflects the personality of its owner: Stefano Novello. Contemporary and unconventional labels for the wines of the Ronco Severo winery, which embrace organic farming principles and are crafted with respect for nature. Ribolla Gialla IGT Venezia Giulia is made from 100% Ribolla Gialla grapes, with vines rooted in the marl-clay soil of Friuli, known as ponca. Harvesting is carried out strictly by hand, with the grapes picked when fully ripe and subjected to a double sorting process in the winery. This is followed by crushing, destemming, spontaneous alcoholic fermentation and ageing in Slavonian oak barrels for around 11 months in contact with the lees. The wine is then left to mature for a further 15 months or so in the same barrels.

Organoleptic Characteristics

Deep yellow colour with golden highlights. Intense aroma, with distinct floral, dried fruit and citrus notes. A slight mineral note that becomes more pronounced in mature wines. On the palate, a wine with good acidity typical of Ribolla Gialla, slightly tannic and savoury.

Occasion and Pairing

A spicy finish, ideal with fish dishes served with delicate sauces, or with medium-aged cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 12–14°C.

Allergens: Solfiti

THE WINERY

Ronco Severo

The Ronco Severo winery is located in the province of Udine, in Prepotto. A winery that reflects the quality of its products and the spirit of owner Stefano Novello. A soul who grew up in a family of farmers, at a certain point Stefano decided to turn the family business around, focusing on the production of artisanal and environmentally friendly labels, a path that led him to obtain organic certification. Today, the Ronco Severo winery is identified in a contemporary way, where body and structure are always present. The vineyards of Ronco Severo stand at a height of about 150 metres above sea level, and their terroir consists of sandstone marls, called “ponca” in the local dialect. Mainly local varieties such as Picolit, Pinot Grigio, Friulano, Schioppettino, Ribolla Gialla and Refosco are cultivated. In the vineyard, every job is meticulous, which is why production is very limited each year, but at the same time it offers higher quality products. Genuine, direct and sincere labels, ideal for connecting those who taste Ronco Severo with the fascinating territory of Friuli Venezia Giulia. Name and address of producer/distributor: Azienda Agricola Ronco Severo - Via Ronchi 93, 33040 Prepotto (UD). Products from this winery should be stored in a cool, dry place away from heat sources.
