Damijan practices strictly organic farming that is attentive to the balance and health of the plants, going along with the rhythms of nature and the phases of the moon for all kinds of processing, from the vineyard to the harvest to vinification. Kaplja, which means “drop” in Slovenian, is a wonderful blend of Chardonnay, Friulano (nekaj) and Malvasia. After harvest, the grapes undergo fermentation with the skins for 60-90 days, followed by ageing for 3 years in 20-30 hl barrels and one year of bottle ageing. Deep golden yellow in the glass, it releases aromas of sweet, ripe fruit, candied peach and apricot, honey and sweet spices, with a citrusy finish. Each grape gives its own characteristic to the wine making it balanced and harmonious on the nose and in the mouth. The pronounced beginning of the Nekaj's olfactory aromaticity gives the Malvasia's aromatic continuity in the mouth, widening leaving a long, soft, savoury finish from the Chardonnay. There are many pairings, from white meats to complex vegetable, fish, and shellfish dishes, but it is superb when paired with dishes with fragrant spices, such as saffron, turmeric, and curry.
