Unique, world-famous wines are produced in the stunning, picturesque Val d'Illasi, just east of Verona, which have put Veneto on the map as a leader in global wine production. The company has evolved its vision by redeveloping their selection and reviving different varieties: they no longer use Molinara grapes and have even rediscovered previously abandoned native vines. The winery's unique spearhead, Vigna Serè is a Recioto, Verona's iconic sweet wine. It is the perfect synthesis of the passion, dedication and experience that the Dal Forno Romano company has accumulated through years of work. It comes from a blend of Corvina 55%, Rondinella 15%, Croatina 20% and Oseleta 10%, hand-picked from vineyards over 10 years old, but only in the best years when weather conditions are optimal and the vintage is exceptional. The harvest is followed by a drying period of about 4 months, pressing in mid-January, and after fermentation it is aged in barriques for 24 months and in the bottle 36 months before being placed on the market. This wine enjoys opulence and density, sweetness and elegance. Notes of plums, black cherries, raspberries, chocolate, coffee and a vanilla finish stand out on the nose and on the palate. Vigna Serè enhances blue cheeses or a dark chocolate soufflé well.
