Chardonnay del Veneto IGT represents the expression of the territory being the only wine produced from Chardonnay grapes cultivated both on volcanic soil and on calcareous soil. Fine and floral, the label reports an optical study taken from the Encyclopédie Diderot, a vast encyclopedia published in the eighteenth century that represents the arrival of a long journey aimed at creating a universal compendium of knowledge, and the first example of a modern encyclopedia of wide circulation. The Chardonnay grapes, once arrived in the cellar, are destemmed and processed according to the non reducing technique, that is without any addition of sulfur: the indigenous microflora has thus developed and characterize the must. Hours of skins maceration of the grapes follow, optimizing this process. After a static decantation, the must begins the fermentation phase in steel at a controlled temperature. The wine is then subjected to a short aging, before being bottled. The glass has a bright yellow color. Great aromatic liveliness. Intense nose of pear and Golden apple. The palate is lively with notes of apple, pear and banana. The finish is fresh and persistent. Ideal as an aperitif, but also excellent with tuna and swordfish carpaccio or with traditional dishes such as capelunga and canestrelli. To fully appreciate its style, Chardonnay di Inama should be served at a serving temperature of 8/10 ºC.
