TASTING NOTES

Production

Valpolicella Superiore is the result of the same rigorous criteria adopted for producing Amarone. The grapes—70% Corvina and Corvina Grossa, 20% Rondinella, 5% Croatina and 5% Oseleta, are harvested by hand from mid-September to the end of October, with meticulous selection of the bunches and berries, and left to dry for approximately 45 days. After fermentation in temperature-controlled stainless steel vats, the Valpolicella is aged for 24 months in new barriques and a further 36 months in the bottle before being released for sale.

Organoleptic Characteristics

In the glass, it presents an intense ruby red colour, accompanied by notes of blueberry, blackberry, cherry, chocolate, jam, vanilla and sweet spices.

Occasion and Pairing

A superb wine to accompany rich red meat dishes, grilled meats and braised dishes.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

Damijan Podversic, supported by his wife Elena, has managed to fulfil his childhood dream of producing great grapes varieties to create a great wine. The most important vineyards of the Damijan winery, in addition to the small parcels scattered in the Collio, are located on the wooded slopes facing south of Monte Calvario, on the outskirts of Gorizia, in an uncontaminated environment that is perfect for growing healthy and tasty grapes. Conceived from Damijan's desire to enhance the old abandoned vineyards on a terroir perfect for viticulture, the winery now has six hectares covered with vineyards, respectful of the ecosystem in which it operates. The viticulture practiced by Damijan is rigorously organic, fully attentive to the balance and health of the plants and to safeguarding the surrounding area. From the lands of Friuli-Venezia Giulia, cultivated with passion by the winemakers of the Damijan winery, varied and typical wines of the area are created, such as Ribolla Gialla, Malvasia Istriana and Friulano.
