Tommasi's Valpolicella Ripasso Superiore comes from the hills of Valpolicella Classica, from the Conca d’Oro and La Groletta vineyards. It is made primarily from Corvina, complemented by Rondinella and Corvinone. After the first fermentation in stainless steel, the wine undergoes the traditional Ripasso technique, with a second fermentation on Amarone grape pomace that enriches its aromas, body and complexity. It is then aged for at least 18 months in large Slavonian oak casks, followed by further bottle ageing. 100 ml: E=332 kJ/ 79 kcal
Deep and bright ruby red in colour. The nose is rich and intensely spicy, with aromas of ripe cherry and cherry preserve, complemented by notes of tobacco and black pepper. On the palate, it is elegant, full-bodied and enveloping, with soft, silky tannins. The finish is long and persistent, marked by a harmonious balance between structure, fruit and spice.
A versatile red wine, perfect for a convivial dinner and for pairing with generous, hearty cuisine. Ideal with boiled meats, braised dishes, roasts and grilled red meats, as well as mature cheeses.
To fully appreciate its structure, elegance and complexity, this wine must be served at a service temperature of 16/18°C.
