Valpolicella Classico Superiore Le Sassine is a red wine produced with 50% Corvina, 15% Corvinone and Rondinella grapes and the remaining percentage of other native vines, including old Veronese vines reproduced from the mother plants present in the vineyard. Red wine from Verona, exclusively produced with wines from the Cru that give the wine richness of flavors and aromas. The grapes are harvested manually, followed by a de-stipping after slight drying. The vinification takes place in late October in red after debouring. Fermentation in steel for about 10-15 days by indigenous yeasts. It is aged in barrels of Slavonia oak from 50 Hl for about 24/36 months. Garnet red of medium body and good longevity that gives a nice vegetal note and a red berry fruit in jam like the blackberry. The taste is full and enveloping, with hints of cherry and dried fruit, especially the tannins are very delicate and do not disturb drinking. Ideal for everyday, it goes well with very tasty red meat, also recommended with game. To fully appreciate the style, this Valpolicella Classico Superiore must be served at a serving temperature of 16/18°C.
