TASTING NOTES

For the production of this Valpolicella Classico DOC (45% Corvina, 35% Corvinone, 15% Rondinella, 5% Molinara) the grapes are harvested by hand in September and immediately pressed. This is followed by a fermentation and maceration process in stainless steel at a controlled temperature for 8-10 days. Ageing takes place in steel tanks and in the bottle, in the cool, dark wine cellar dug into the tuff under the Vajol hill. A wine with a light ruby red colour impresses with its transparency and (red) berry fruit on the nose: pomegranate, tart cherry, currants, with wisteria flowers and red roses. On the palate, it is fresh, tasty, balanced and smooth with a pleasantly persistent finish. To be drunk every day and preferably combined with cured meats. Read more Read less
THE WINERY

Rubinelli Vajol

In the hilly areas of Veneto lies the Conca del Vajol. With its soils with a strong presence of limestone and tufa, with traces of clay and skeleton, it is home to the Cantina Rubinelli Vajol and its 10 hectares of vines, in the heart of the Valpolicella territory. Perfect sun exposure of the vines and a temperate, well-ventilated climate provide ideal terrain for the cultivation of prized grapes, most of which are the indigenous Corvina, Corvinone, Rondinella, Molinara and Oseleta. The grapes are cultivated and cared for using different methods, the traditional ones and some more modern ones. In addition, the land is respected to the highest level with regards to its form, also thanks to the use of mechanical weeding instead of herbicides and synthetic fertilisers. The absolute quality of the wines produced in the winery is also due to a harvest that is entirely carried out by hand in successive steps, depending on the necessary maturation period of the grapes. The result is an absolute excellence of Veneto red wines such as Amarone, Valpolicella Classico Superiore, Recioto, Ripasso and Valpolicella Classico.
