The Cave Mont Blanc winery is a cooperative reality with a production focused on Metodo Classico sparkling wines that manage, bottle after bottle, to give more and more prominence to the most famous white grape of Valle D'Aosta, the Priè Blanc. It is located on the slopes of Mont Blanc, at an altitude of 2,000 metres, where the wine takes on unique distinctiveness due to different atmospheric pressure and characteristic processing conditions. The Cuvée des Guides is a sparkling wine dedicated to the Alpine guides. It is made from monovarietal Priè Blanc grapes, harvested by hand and left to age in stainless steel before a second fermentation and a long period on yeasts. In the glass, it displays a luminous straw yellow colour and a fine, persistent perlage. The olfactory picture is characterised by great freshness with its sensations of citrus fruits, mountain herbs and a distinct memory of alpine breezes. On the palate, it is fresh, savoury and with a vertical bite, but with excellent length. Perfect throughout the meal with Valdostan dishes, such as fontina cheese and Arnad lard.
