TASTING NOTES

Production

Trento 1673 Extra Brut Riserva embodies one of the finest expressions of the Metodo Classico and stands as a testament to the excellence of Cesarini Sforza. Following the harvest of the Chardonnay grapes, a gentle pressing is carried out in a vertical Marmonier press. This is followed by static decanting of the musts and fermentation of the free-run juice alone at a controlled temperature in stainless steel tanks. Ageing on the lees lasts for approximately 6 months. This is followed by secondary fermentation in the bottle and a further 70 months on the lees. E=310 kJ/74 kcal

Organoleptic Characteristics

Delicate and enveloping on the nose, the immediate subtle notes are a prelude to more complex aromas that continually evolve in the glass. The perlage is dense and brilliant. Savoury and rich on the palate, with a deep and persistent finish.

Occasion and Pairing

Even as an aperitif, it pairs beautifully with sushi and sashimi. Ideal with a large plate of mixed fried seafood.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 8–10°C.

Allergens: Solfiti

THE WINERY

Cesarini Sforza

Since the mid-seventies, when a small group of entrepreneurs began producing sparkling wine, the company Cesarini Sforza is one of the reference points of the Metodo Classico trentino. In 1976 the first Cesarini Sforza sparkling wine was produced according to the Metodo Classico; in 1985 a daring Rosé Metodo Classico was produced from Pinot Nero grapes grown on the hills of the Valle di Cembra and subsequently, thanks to the continuous viticultural and oenological research, in 1986 we arrive at the birth of the first Riserva Aquila Reale produced using only Chardonnay grapes grown above 500m. the vineyards from which the Cesarini Sforza sparkling wines come are located in the most suitable areas of the name: soils, altitudes (300-600 mt. s.l.m.), microclimates and different breeding systems that allow to achieve a unique style and great personality, expression of the quality of the label. Name and address manufacturer/distributor: Cesarini Sforza Spumanti Spa, via Stella, 9a - 38123 Trento (TN). The products of this cellar should be stored in a cool and dry place away from heat sources.
