TASTING NOTES

Production

Trento 1673 Extra Brut Riserva embodies one of the finest expressions of the Metodo Classico and stands as a testament to the excellence of Cesarini Sforza. Following the harvest of the Chardonnay grapes, a gentle pressing is carried out in a vertical Marmonier press. This is followed by static decanting of the musts and fermentation of the free-run juice alone at a controlled temperature in stainless steel tanks. Ageing on the lees lasts for approximately 6 months. This is followed by secondary fermentation in the bottle and a further 70 months on the lees. E=310 kJ/74 kcal

Organoleptic Characteristics

Delicate and enveloping on the nose, the immediate subtle notes are a prelude to more complex aromas that continually evolve in the glass. The perlage is dense and brilliant. Savoury and rich on the palate, with a deep and persistent finish.

Occasion and Pairing

Even as an aperitif, it pairs beautifully with sushi and sashimi. Ideal with a large plate of mixed fried seafood.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 8–10°C.

THE WINERY

Cesarini Sforza

Charles Heidsieck is the smallest of the Maisons de Reims. Founded by Charles Camille, grandson of Florens-Louis, son of Charles and Amélie Henriot, back in 1851, when he bought 47 crayères in which to vinify the grapes grown by his cousin Ernest Henriot. Today, the Maison Heidsieck is the benchmark among small, but high value and quality companies. The special feature of the Maison are the large underground chalk quarries that extend over 8 kilometres of galleries, recognised as a UNESCO World Heritage Site. Millions of bottles are stored inside, with maturation on the lees for up to forty years. The style of Heidsieck Champagne is recognisable and synonymous with harmony and generosity in its aromatic profile. Vinification only in stainless steel until malolactic fermentation is complete, long maturation on the lees and high sugar levels.
