TASTING NOTES

Trento DOC 1673 Noir Nature is made exclusively with Pinot Noir grapes and proposed in the version not dosed to live the purest essence of the terroir. After a harvest and selection of grapes, alcoholic and malolactic fermentation begins. In addition to the second fermentation foreseen in the Trentino Classic Method, yeasts accompany the sparkling wine for a further 48 months. After disgorgement the sparkling wine rests in the cellar for a further 3 months before marketing. 1673 Noir Nature divides its expression between elegance and grit. The debut to the nose is characterized by immediate fruity hints, typical of Pinot Noir. The bouquet of small red fruit, pepper and barley then evolves into more complex, warm and spicy sensations that complete the olfactory spectrum. The entrance to the palate is characterized by an elegant creaminess and a long and savory persistence. The thick and delicate perlage completes the deep and scratchy sip. Perfect as an aperitif, 1673 Noir Nature goes well with any type of leavened pasta. Excellent with pizzas, focaccia, crostini of all kinds. Cesarini Sforza

Since the mid-seventies, when a small group of entrepreneurs began producing sparkling wine, the company Cesarini Sforza is one of the reference points of the Metodo Classico trentino. In 1976 the first Cesarini Sforza sparkling wine was produced according to the Metodo Classico; in 1985 a daring Rosé Metodo Classico was produced from Pinot Nero grapes grown on the hills of the Valle di Cembra and subsequently, thanks to the continuous viticultural and oenological research, in 1986 we arrive at the birth of the first Riserva Aquila Reale produced using only Chardonnay grapes grown above 500m. the vineyards from which the Cesarini Sforza sparkling wines come are located in the most suitable areas of the name: soils, altitudes (300-600 mt. s.l.m.), microclimates and different breeding systems that allow to achieve a unique style and great personality, expression of the quality of the label.
