Cavit Trento DOC Brut embodies the classic elegance of mountain sparkling wines, a Metodo Classico that expresses all the freshness of the Trentino terroir. Produced mainly from Chardonnay grapes grown in the finest areas of the Avisian Hills and the Valle dei Laghi, it undergoes a rigorous sparkling wine production process involving a second fermentation in the bottle and a rest on the lees for at least 24 months. Visually, it presents a pale straw-yellow colour with greenish highlights, enlivened by a persistent and very fine perlage. On the nose, the impression is fresh and fragrant: notes of Golden Delicious apple and bread crust dominate, enriched by a delicate bouquet of white flowers and a slight hint of toasted hazelnut. On the palate, it reveals a lively and harmonious character; the acidity is well balanced by a savoury, mineral structure that makes the mouthfeel clean, elegant and decidedly inviting.
Thanks to its extreme versatility, it is the perfect sparkling wine for the entire meal. Although it is at its best as a refined aperitif, it pairs excellently with fish-based starters, seafood crudités and light Mediterranean-style first courses. It is also an ideal companion for fried vegetables or seafood, where its effervescence and freshness act as an excellent fat-cutting agent, leaving the palate perfectly balanced.
