TASTING NOTES

Red Testamatta reveals precise personality and great vivacity starting from the color of beautiful brightness. The vinification of Sangiovese takes place in barrique, where the must ferments spontaneously, and the aging of two years is always done in French oak barrels. The olfactory profile, of great richness, is concentrated on fruity and slightly floral tones, to then fade towards spicy and elegantly wild hints. The mouthfeel, concentrated and elegant, is fresh, captivating, with finely extracted tannins and a finish that recalls citrus scents. Testamatta is a wine that perfectly accompanies dishes of earth, baked pasta and main dishes based on red meat thanks to its complexity, harmony and persistence. THE WINERY

Bibi Graetz

Born into a family of artists, after his studies at the Academy of Fine Arts in Florence, Bibi Graetz took over the family vineyards around the castle of Vincigliata in the hills of Florence in 2000 and from a few barriques of Sangiovese, Colorino and Canaiolo his most iconic wines were born: Testamatta and Colore. The artist's background is clearly evident in the bottles where the labels are pictures painted by Bibi. Vineyards well over 50 years old and at altitude, the choice of indigenous vines and a natural approach in the winery are the founding elements of Bibi's vision of organic and sustainable viticulture. In 2019, Bibi Graetz's winery moved to the central square of Fiesole, inside Villa Aurora, a splendid early 19th-century hotel on the hill overlooking Florence and converted into a winery to house Testamatta and Colore, as well as Bibi and his family.
