TASTING NOTES

The Sodi di San Nicolò represents the top quality of the production of Castellare di Castellina. First among the Supertuscan to be included in the top 100 of Wine Spectator with the historic 1985 vintage. I Sodi is a great wine Tuscan red wine made from 85% Sangiovese and 15% Malvasia Nera, coming from a single vineyard with calcareous soil, located between 350 and 400 meters above sea level. After fermentation in cement tanks, the wine rests for a variable time from 24 to 30 months in French oak barrels, followed by 12 months in bottle. The result is an elegant and classy wine, complex and deep, with a ruby red color and characterized to the nose by balsamic, spicy and ripe fruit notes. The sip dialogues with the smell adding to the texture, the refined acidity of Sangiovese, a guarantee of the extraordinary ability of this wine to keep and improve over the years. The aging in barrique makes the tannins sweet and balanced. We are in front of a wine to taste on important occasions, perhaps after a further rest in the cellar, ideal in combination with succulent meat dishes or aged cheeses.
