The Tolaini winery is located at the heart of the Chianti Classico region. It is characterised by the power and longevity which it imparts upon its wines, with a focus on tradition and innovation. Toscana Al Passo is produced from 34% Sangiovese, 33% Merlot, and 33% Cabernet Sauvignon grapes from vines grown on a loam-clay, chalky soil with a high rocky content. The first selection of the grapes takes part at the vineyard during harvesting. It then continues at the wine cellar, with the help of an optical sorter. The selected bunches are destemmed and the whole grapes are immediately transferred to temperature-controlled stainless steel tanks for the fermentation process. The must is allowed to rest on the skins for 20 days. The wine then spends 14 months in tanks and French oak barriques, six of these on the fine lees. In the glass, it is a clear and bright ruby red colour with reflections tending towards garnet due to ageing. It is clean on the nose with aromas of red berry fruits, liquorice, and vanilla with spicy notes of black pepper. Full-bodied with fairly soft tannins, aromas of ripe fruit, vanilla and liquorice with a rich, spicy finish. This is a wine perfect for drinking with friends, during a hearty Sunday lunch, paired with red meat.
