The Passopisciaro Winery is one of the youngest players on the Sicilian wine scene, a benchmark for wine production in the area. Passopisciaro’s Passobianco is a Chardonnay-based Sicilian IGT white wine. The 12-year-old vines are grown at an altitude of 1,000 metres above sea level. Vinification takes place over 20 days in stainless steel, whilst ageing lasts 10 months, in both concrete and wood.
A beautiful golden yellow in colour, the nose offers a bouquet of aromatic herbs and Mediterranean scrub combined with tropical fruit and mineral notes. On the palate, it is fresh, distinctly mineral, with good length.
An excellent wine for Sunday lunches, perfect with fish and shellfish dishes.
To fully appreciate its style, this wine should be served at a temperature of 10–12°C.
