After the harvest, the grapes are destemmed and gently crushed to separate the juice from the seeds. Fermentation takes place in temperature-controlled stainless steel vats to best preserve the wine’s organoleptic characteristics, such as its fruity aromatic profile and brilliant colour. Once fermentation is complete, the wine is left to mature for at least 12 months in large oak barrels. This ageing process allows the aromatic characteristics to consolidate and enrich further, giving the wine greater balance and a long finish. Visually, it presents an intense ruby red colour, enhanced by violet hues that make it visually captivating. On the nose, it offers a complex and enveloping bouquet, dominated by hints of ripe red fruits such as cherry and plum, accompanied by delicate notes of spice and vanilla, a distinctive trait resulting from ageing in wood. On the palate, the wine is robust and well-structured, with soft tannins that lend it a pleasant elegance. The perfect balance between freshness and smoothness creates a harmonious sensation, whilst the long finish leaves a fruity and slightly spicy aftertaste that invites you to take another sip.
A wine that successfully combines power and refinement, making it perfect for enjoying on various occasions. It pairs perfectly with red meats, such as roasts, grills, braised dishes and steaks. Mature cheeses, such as pecorino, Parmigiano Reggiano and other hard cheeses, also find an excellent companion in this wine. It is also perfect with traditional Marche dishes, such as maccheroncini with meat ragù, grilled meat and dishes with rich sauces. For those who love game, a dish of stewed wild boar pairs beautifully with this red.
