TASTING NOTES

Soave is one of the best-known Italian whites in the world, and this fame is largely due to the efforts and sacrifices of the Pieropan family. The winery was founded back in 1880 by Leonildo Pieropan. It is now managed by his grandson, also called Leonildo, helped by the untiring Teresita. The current Leonildo has always believed strongly in the land, even in the most difficult of times, and has indeed succeeded in making the company’s wines among the most popular and famous of the designation. Location, tradition, and quality are the three key words of their philosophy. With vineyards transitioning to organic farming, the most renowned of which being Calvarino and La Rocca, they now produce more than 500,000 bottles with an unmistakable character, where the mineral notes of the volcanic soil stand out and enrich the fruit notes of the Garganega, a native variety of the area. Recioto di Soave Le Colombare DOCG is a white raisin wine, or passito, produced exclusively from Garganega grapes which undergo drying in a drying loft after being harvested. During this phase, which lasts until February, as well as losing water they develop the noble rot that gives them their unique sensory characteristics. After being fermented in stainless steel, the wine is aged in large wooden barrels for around two years. An intense golden yellow in colour, the wine is extremely elegant and complex on the nose: really ripe fruit and raisin notes combine with candied citrus fruit and sweet spices. On the palate, it is soft and warm with a sweetness that is not at all cloying. We recommend sipping this wine leisurely to avoid losing any of its aromatic nuances, or pairing it with dry pastries.
