The name Re stands out from the name Recioto, thus wanting to underline that among all these is the noblest wine, unique in its taste and expressive richness, for which greater attention must be paid in the production, which is deliberately limited. Recioto della Valpolicella DOCG is made from 50% Corvina, 20% Corvinone, 25% Rondinella and 5% Oseleta and Croatina grapes. Its characteristic sweetness comes from a particular focus on fermentation: removed from the pomace, the wine is placed in barriques at the natural winter temperature, which wisely slows down the process. The ancient art of racking, always in the same drums, allows you to achieve the most perfect balance between alcohol and sugars possible. The refinement, for at least 12 months, therefore forges its unique and determined character. 100 ml: E=503 kJ/120 kcal
On the nose, it's a triumph of spicy notes: cinnamon, nutmeg, and even more pronounced are the hints of cocoa, pepper, and clove; then comes the fruit, with notes of plum and fresh black cherries. In the mouth it is velvety, soft, wide with the right tannicity. All aromas that are well blended together, standing side by side and not overlapping, in great sumptuousness.
It is an excellent accompaniment for aged cheeses such as a Monte Veronese aged over 9 months, blue cheeses accompanied by jams or mustards. A particular pairing is with foie gras. It is traditionally paired with desserts made from shortcrust pastry, cantucci or sbrisolona.
To fully appreciate its style, Recioto de La Giuva should be served at a serving temperature of 14°C.
