The title ‘Re’ (King) stands out in the name ‘Recioto’, emphasising that this is the most noble of all wines, unique in taste and expressive richness, and one that requires greater care in production, which is deliberately limited. Recioto della Valpolicella DOCG is made from 50% Corvina, 20% Corvinone, 25% Rondinella and 5% Oseleta and Croatina grapes. Its characteristic sweetness stems from particular attention to fermentation: once removed from the pomace, the wine is placed in barriques at the natural winter temperature, which wisely slows down the process. The ancient art of racking, always within the same barrels, allows for the most perfect possible balance between alcohol and sugars. On the nose, it is a triumph of spicy notes: cinnamon, nutmeg and, even more pronounced, hints of cocoa, pepper and cloves; fruit then emerges, with notes of fresh plums and black cherries. On the palate, it is velvety, smooth and full-bodied with just the right amount of tannin. All these aromas are beautifully blended, complementing rather than overpowering one another, creating a truly sumptuous experience.
It is an excellent accompaniment to mature cheeses such as a Monte Veronese aged for over 9 months, or blue-veined cheeses served with jams or chutneys. A particularly fine pairing is with foie gras. Traditionally, it is paired with desserts made from shortcrust pastry, cantucci or sbrisolona.
To fully appreciate its style, this wine should be served at a temperature of 12–14°C.
