Production

The title ‘Re’ (King) stands out in the name ‘Recioto’, emphasising that this is the most noble of all wines, unique in taste and expressive richness, and one that requires greater care in production, which is deliberately limited. Recioto della Valpolicella DOCG is made from 50% Corvina, 20% Corvinone, 25% Rondinella and 5% Oseleta and Croatina grapes. Its characteristic sweetness stems from particular attention to fermentation: once removed from the pomace, the wine is placed in barriques at the natural winter temperature, which wisely slows down the process. The ancient art of racking, always within the same barrels, allows for the most perfect possible balance between alcohol and sugars. Ageing, for at least 12 months, then forges its unique and distinctive character. 100 ml: E=503 kJ/120 kcal

Organoleptic Characteristics

On the nose, it is a triumph of spicy notes: cinnamon, nutmeg and, even more pronounced, hints of cocoa, pepper and cloves; fruit then emerges, with notes of fresh plums and black cherries. On the palate, it is velvety, smooth and full-bodied with just the right amount of tannin. All these aromas are beautifully blended, complementing rather than overpowering one another, creating a truly sumptuous experience.

Occasion and Pairing

It is an excellent accompaniment to mature cheeses such as a Monte Veronese aged for over 9 months, or blue-veined cheeses served with jams or chutneys. A particularly fine pairing is with foie gras. Traditionally, it is paired with desserts made from shortcrust pastry, cantucci or sbrisolona.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 12–14°C.

La Giuva

Since its foundation, the La Jara winery has enjoyed a very strategic geographical position, which has benefited its processing and production. Nestled between the slopes of the hills of Conegliano and Valdobbiadene, in one of the most fortunate wine-growing areas in the Veneto region, the winery has been able to exploit the unique quality of the soil to create wines from Veneto of the highest quality. The temperature, sunshine and degree of humidity have proved optimal for the cultivation of its vineyards, which extend to the edge of the Piave River. The winery has always used traditional techniques with full respect for the land and region.
