Giovanni Allegrini’s Recioto Classico della Valpolicella is a sweet wine from Veneto produced from a blend of 40% Corvina Veronese, 40% Corvinone, 15% Rondinella and 5% Oseleta, fermented in stainless steel and subsequently aged for 14 months in wood and a further 10 months in the bottle. It shares the grape-drying technique with Amarone, but differs in that the fermentation process is naturally halted before all the sugars are converted into alcohol.
