Production

Montelvini’s Prosecco Asolo Superiore Extra Dry is produced using the Martinotti-Charmat method, which involves a prolonged secondary fermentation in temperature-controlled tanks, allowing the wine to develop a fine, persistent perlage whilst preserving the freshness and aromatic characteristics of the Glera grape variety.

Organoleptic Characteristics

This Prosecco has a brilliant straw-yellow colour and an elegant perlage. On the nose, it offers a bouquet of fresh, floral aromas, with hints of wisteria and acacia blossoms, followed by fruity notes of green apple, pear and citrus. On the palate, it is smooth, creamy and harmonious, with a slight sweetness that balances perfectly with the lively acidity.

Occasion and Pairing

Thanks to its versatile character and pleasant smoothness, Prosecco Asolo Superiore Extra Dry is an excellent aperitif and pairs beautifully with light starters, cured meats, fish or vegetable dishes, and goes perfectly with ethnic cuisine, such as sushi.

THE WINERY

Montelvini

The Montelvini winery, a historic family business with more than 140 years of experience, is based in Venegazzù di Volpago del Montello, in the heart of the Asolo Montello DOCG. With about 35 hectares of vineyards part of a total estate of 200 hectares, it mainly grows Glera grapes on its Le Zuitere and Fontana Masorin estates. Montelvini is renowned for its Asolo Prosecco Superiore DOCG, particularly the Serenitatis Collection in the Brut and Extra Brut versions, noted for elegance, freshness and fine perlage. Innovative and attentive to the terroir, it was the first winery in Asolo DOCG to launch a Cru, produced from vineyards at 333 meters above sea level and characterized by a floral and mineral profile.
