Production

Paololeo was destined to produce wine from the family vineyards of Masseria Monticello. What he probably didn’t expect at the outset, in the early 1990s, was to become one of the most important producers in Salento. One of the most beautiful areas in southern Italy, it is constantly buffeted by both the warm sirocco winds and the cold tramontana, creating significant temperature fluctuations that contribute to the quality and aromatic variety of the grapes produced here. Located right in the heart of the Salice Salentino DOC, more precisely in the municipality of San Donati, the Paololeo winery boasts 25 hectares of vineyards and is a family-run business managed with passion by its namesake heir, Paololeo. The style is youthful, like the owners, whilst respecting tradition and its traditional grape varieties. 100 ml: 350 kJ/84 kcal

Organoleptic Characteristics

Primitivo di Manduria is a wine of excellent structure and body, with a high alcohol content and an intense bouquet; it lingers on the palate, evoking the ripe fruit ripened under the Salento sun. Aged for 6 months in American oak barriques and 2 months in steel, Primitivo PaoloLeo presents an intense ruby red colour and intense aromas of ripe cherries and black cherries, with notes of chocolate and coconut. On the palate, it is full-bodied and balanced, with well-integrated and balanced tannins.

Occasion and Pairing

It is ideal paired with roasts, game and wild mushrooms.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 14–16°C.

Paololeo

The Paololeo winery was established in the heart of Salento, in Puglia, and from the start set itself the goal of producing high-quality wines to suit all tastes and budgets. An ambitious project that was passionately pursued, and which reaps its rewards today. The winery, in fact, is a real point of reference for winemaking in Puglia. Thanks to their commitment and passion, in fact, the founding family has been able to study the land and its most valuable characteristics to create Pugliese wines that best describe and enhance the territory. The vines stand on clay-limestone soil, alternating between sandier areas and others with emerging rock. These, combined with the mild climate typical of Salento, have made this area one of the most fertile and suitable for crops of all kinds. The microclimate of the Adriatic coast gives the grapes an exceptional quality, which can be found in the final product.
