TASTING NOTES

Paleo Rosso is made from only Cabernet Franc grapes from the Puntone, Casa Nuova and Vignone vineyards. The composition of soils varies according to the sub-area and generally includes clay, limestone and skeletons. After the manual harvest, the grapes are double-sorted in the cellar and then stored in cement tanks for alcoholic fermentation with about 25 days of contact with the skins. Once the fermentation process is completed, the wine is transferred to oak barrels for aging of 18 months. At the glass Paleo Rosso reveals an intense ruby red color with purple reflections. The nose is marked by hints of blackberry, raspberry jam, licorice and rosemary, combined with hints of white pepper, eucalyptus and sweet tobacco. Important and structured on the palate, it reveals a fresh and savory verve that contributes to make the drink tense and dynamic. A dense tannic texture but silky accompanies the balsamic and spicy finish. Important and structured, Paleo Rosso is excellent with blue cheeses or game.
