The manual harvesting of the grapes, their gentle pressing and subsequent transfer to a pressure tank preserve the organoleptic characteristics of the original grapes. A key factor is the grapes’ contact with the skins for several hours to extract important precursors of aroma and flavour. The grape variety used for its production is 100% pure Moscato. It comes from the classic Piedmont region, in Mombaruzzo in the province of Asti. The vinification process involves separating the must from the skins after a few hours. This is followed by fermentation in temperature-controlled stainless steel tanks at a cool temperature, where the second fermentation takes place. It has a bright straw-yellow colour. The bouquet is broad and aromatic, with characteristic notes of candied fruit, apples and honey. On the palate, it is delicately sweet and smooth, with a perfect balance between sweetness and acidity.
A wine which, in keeping with Italian tradition, is ideal with desserts at the end of a meal. More recently, more original pairings have been suggested, including with savoury foods such as certain cheeses, and foods with a spicy or piquant flavour. It also pairs well with fruit, such as figs or melon.
To fully appreciate its style, this wine should be served at a temperature of 8–10°C.
