TASTING NOTES

Good pomace and a hundred years of experience: it was 1898, when GioBatta Poli began distilling in Schiavon near Bassano del Grappa, in the heart of the Veneto region. Distilling means obtaining the essence of skins and pomace, products that in the normal stages of winemaking are actually waste: history teaches us never to throw anything away, it is precisely from this principle that grappa is obtained. An aged, vintage and soft grappa, created from the fresh and fragrant pomace of Cabernet Sauvignon and Cabernet Franc obtained from the fermentation of Sassicaia wine, the only wine in Italy to have its own production regulations. Distilling means, in fact, delicately extracting the essence of a wine and who, better than the Poli, knows how to make such a complex process so noble, made possible thanks to a special still that the Poli family jealously guards in its distillery. Before being bottled, the Sassicaia San Guido grappa rests for 4 years in barriques and 6 months in the majestic Sassicaia barrels for ageing. A drink for connoisseurs, for anyone who wants to taste Bolgheri in a revisited, distilled key or for anyone who wants a prestigious bottle to collect. The colour is bright amber. Vanilla, currants, blueberries, licorice are some of the scents that this distillate can give. The mouthful is soft, vinous, delicate, but if you close your eyes it reminds you of that red glass with a blue label. A meditation drink to be drunk on its own or with bitter chocolate.
