Livio Felluga represents one of the great names in Friulian vinification, through avant-garde winemaking aimed at enhancing the border area. Created in 1998 by Livio Felluga's sons and dedicated to him on his 85th birthday, Illivio expresses the Patriarch's personality, combining strength and elegance. Cultivated using the guyot method, the vines benefit from soils composed of marl and sandstone of Eocene origin. The manual harvesting of grapes was healthy and perfectly ripe. Illivio consists of 60% Pinot Blanc, 38% Chardonnay and 2% Picolit. Gentle destemming and short maceration with soft pressing, the must clarifies through decantation. This is followed by temperature-controlled fermentation in small oak barrels. At the end of the malolactic fermentation, the wine remains on the lees for a few months in small oak barrels to increase its full flavour, creaminess and suitability for ageing. Once bottled, the wine rests in thermo-conditioned rooms for ageing. Intense straw yellow in colour and bright in the glass, Illivio di Felluga is complex on the nose and creamy with distinct floral and ripe fruit notes. It opens with scents of lime blossom, broom, wisteria and chamomile blending with fruit notes of yellow peach, apricot, mandarin and tropical fruits of pineapple and mango. The barrel ageing gives gentle notes of coconut, mace, vanilla, brown sugar and sweet spices. On the palate, softness is balanced by fresh acidity, with aromas of yellow plum, peach and papaya. Notes of millefiori and white chocolate mingle on the finish with a delicate hint of rosemary and walnut husk. Particularly suitable for fish based dishes, risottos and fresh cheeses.
