Alma Assemblage 2 represents the quintessential expression of the Bellavista style. It is made from a blend predominantly of Chardonnay, Pinot Noir and a small proportion of Pinot Blanc, sourced from various vineyards in Franciacorta. The base comprises wines from different vintages, selected for balance and finesse, with a proportion of reserve wines. Secondary fermentation takes place in the bottle according to the Metodo Classico, with ageing on the lees for around 30 months, aimed at imparting complexity and creaminess.
A brilliant straw-yellow colour with golden highlights. Fine, continuous and persistent bubbles. An elegant and harmonious bouquet: notes of white flowers, citrus and apple, accompanied by hints of bread crust, fine pastries and almond, with subtle mineral undertones. On the palate, it is fresh, balanced and creamy. The bubbles are fine and well-integrated, supported by a pleasant savoury quality. The finish is clean, elegant and persistent, with hints of citrus and a touch of toast.
Versatile and food-friendly, it pairs well with raw fish and shellfish, light pasta dishes, and baked or grilled fish.
To fully appreciate its style, this wine should be served at a temperature of 8–10°C.
