The production of Bianco di Custoza is permitted only in the hamlet of the same name, in the municipality of Sommacampagna, in the province of Verona. The blend consists of 50% Garganega, followed by 30% Trebbiano and Tocai. The vines are grown on land adjacent to the winery, in Castelnuovo del Garda. The grapes are harvested by hand and the must ferments at a temperature of 16 degrees using only wild yeasts. Vinification takes place separately and, after a three-month period on the lees, the blend is created, which may vary from year to year. Custoza is a fresh and lively table wine, a pleasant blend that is very easy to drink. Straw-yellow in colour with greenish hues, it has aromas of white flowers, nettles and fresh herbs, and on the palate it is savoury yet enveloping.
An ideal wine with fish-based starters, pasta in broth, but also as a summer aperitif to enjoy with friends.
To fully appreciate its style, this wine should be served at a temperature of 12–14°C.
