TASTING NOTES

Production

Schiopetto’s Collio Friulano is produced in the hillside vineyards of the Collio region, on ponca soils that give the wine a distinct territorial identity and a natural mineral character. The Friulano grapes are harvested by hand and vinified according to the winery’s philosophy, which is based on precision, elegance and respect for the raw material. Fermentation takes place in temperature-controlled stainless steel tanks to preserve freshness and aromatic integrity. Ageing continues in stainless steel on the fine lees, with periodic bâtonnage, which imparts greater structure and complexity without compromising the wine’s expressive finesse.

Organoleptic Characteristics

Visually, it presents a bright straw-yellow colour. On the nose, it is refined and elegant, with aromas of white flowers, pear, apple and citrus, accompanied by typical notes of almond and delicate mineral undertones. On the palate, it is balanced and harmonious, with fresh acidity, a pleasant savouriness and a supple structure leading to a persistent finish, characterised by the classic, slightly bitter aftertaste typical of Friulano.

Occasion and Pairing

A highly versatile wine, ideal as an aperitif but also perfect throughout a meal. It pairs excellently with light starters, fish dishes, San Daniele prosciutto, fresh cheeses and traditional Friulian cuisine.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 10–12°C.

THE WINERY

Schiopetto

The Secondo Marco winery is located in Fumane, in the heart of Valpolicella Classica. The area enjoys a perfect microclimate: a combination of winds and a cold-mild climate, particularly favourable for the development of vines. The soil is rich in mineral salts and is very variable in stratigraphy, even for vineyards in the same locality. This is combined with the variables of research in the winery to bring out all the full flavour and richness of the grape's aromas. The company comes from a family tradition, with the desire to change and offer something new but with the intention of leaving room for the new generation. The company, after years of continuous research and observation in the vineyard and soil, decided to be the first to adopt the modified Y-shaped pergola planting, altering the traditional cultivation method used for the vines of Valpolicella. The advantages were mainly to allow more light, ventilation and leaf structure for the vines. The bunches of grapes grow perfectly in a hanging manner, without touching the shoots and avoiding invasive maintenance with greater ease of harvesting during the harvest period.
