Frederic Savart is a talented young vigneron who makes extraordinary Champagnes near the small villages of Écueil and Villers-aux-Nœuds, on the north-west slopes of Montagne de Reims. Frederic manages 6 hectares of Premier Cru-classified vineyards with different varieties of Pinot Noir and Chardonnay, all in the continuous search for the best quality, which starts with the best grapes. Savart prefers an artisan approach of harvesting by hand in the vineyard, low yields, and the highest possible quality attained through natural means. Bulle de Rosé is a Champagne made through a blend of Chardonnay and Pinto Noir grapes grown in the Premier Cru terroirs of Écueil and Villers-aux-Nœuds. Following fermentation, a small amount of vinified red Pinot Noir is blended with the vins clairs. The second fermentation develops in the bottle through the Champenoise Method, before resting on lees for at least 24 months. In the glass, it has a soft coral rose robe with a subtle, continuous perlage. The olfactory range brings to mind citrus fruits, small forest fruits, bread crust and soft spices. On the palate, it is taut and racy with refined, elegant aromas and a pleasant finish of mineral freshness. Ideal when pairing with salmon tartare, this Champagne should be served at a temperature of 8/10°C in order to fully appreciate its style.
