TASTING NOTES

The Extra Brut Blanc de Noirs Le Bout du Clos is a wine produced from grapes of a single parcel, in this case 100% Pinot Noir from the historic town of Ambonnay. Vines grown under a strict biodynamic regime, with manual harvesting of the grapes at full maturity. In the cellar we continue with the blending of the base wines according to the Soleras method, then adding liquids of different vintages, and then the refermentation in bottle is started. The aging takes about 6 years. The Champagne Bout Du Clos is presented to the glass with a golden yellow color, of great intensity and a fine and persistent bubble. A bouquet of crunchy red fruit, blood orange, hawthorn and wildflower honey. A definite generosity, for a sunny and joyful nectar. Incredible sip for the ability to combine the fullness of pulp, to a more jovial and juicy, to be attributed to freshness and flavor always present and integrated. The latter then drags the liquid into a very intense and long persistence. Excellent in combination with a grilled salmon or with a fish appetizer. Jacques Selosse

Jacques Selosse is a myth of french bubbles, an absolute reference point for the french wine area of Champagne. Jacques and his son Anselme began in 1974 to make their own grapes, giving an important qualitative breakthrough and becoming a point of reference for the small independent vignerons of Champagne. Since 1980, Anselme and his wife Corine have been leading the production, starting a project to exploit every single parcel he owns. Today Selosse covers 7 hectares of vineyards, including the Grand Cru of Chardonnay in the municipalities of Avize, Cramant, Oger and the Grand Cru of Pinot Noir in Ay and Ambonnay. The vineyards are cultivated in a natural and environmentally friendly way, without the use of synthetic chemicals, with very low pruning and reduced yields. In the cellar the fermentation takes place with only indigenous yeasts and the liquer d'expedition consists of only pure fructose of grapes. Each processing is carried out strictly manually, with batonnage, remuage and degorgement. Selosse Champagnes are complex and refined, the result of a production philosophy focused on respect for nature and the enhancement of terroir. A unique style and great personality.
