TASTING NOTES

Champagne Extra Brut Avize Champ Caïn, a single hectare in the municipality of Avize, consists of only Chardonnay grapes, whose rows are exposed to the south, with an optimal position for maturation. It is a real magic created by Jacquesson and produced only in years considered exceptional, being a vintage. Vinified and aged in wooden barrels, the same where malolactic fermentation also takes place, Extra Brut Champ Caïn ages for 8 years on the lees, before disgorgement and is a unique Champagne, precious and sought after, a truly special taste that combines a perfect maturity with a growing gustatory tension. The glass has a pale straw yellow color with slight golden reflections, shows a very subtle and long-lasting perlage that culminates in a white froth. Delicious aroma of dried fruit, raisins and dried apricot, then hazelnuts and toasted almonds, acacia honey and quince that combine with clear mineral hints. Sip that does not disappoint, is addictive in the complex and powerful structure that speaks of freshness, flavor and fullness of taste. A very enjoyable Champagne already now but able to give emotions at least for the next 15 years. Excellent in combination with oysters, great sea curi in general or with shellfish. THE WINERY

Jacquesson

The Maison Jacquesson was founded by Mimme Jacquesson in the late 18th century in Dizy, north of Epernay. Since the eighties the brothers Laurent and Jean-Harvé Chiquet have led the estate, contributing to the birth of a myth by introducing cuvées based on a single vintage declared combined with Reserve Wines, according to a transparent approach that aims to offer the purest manifestation of terroir and base vintage offering a sans année always different. The grapes processed by Jacquesson are Chardonnay, Pinot Noir and Meunier in varieties distributed between the villages of Grand Cru of Avize and Oiry in the Côte des Blancs and Aÿ in the Vallée de la Marne. The terroir is distinguished by the chalky subsoil that distinguishes the Champagne region, excluding the use of herbicides.
