Françoise Bedel’s Extra Brut “Jouvence” Champagne is a cuvée of extraordinary energy which, as the name itself suggests, aims to celebrate a sort of “eternal youth” expressed through the rigour of biodynamics. Produced mainly from Pinot Meunier grapes, this wine comes from vines rooted in clay- and marl-rich soils in the Marne Valley. The winemaking process involves spontaneous fermentation and a long ageing on the lees, usually exceeding five years, with an almost imperceptible Extra Brut dosage that preserves the integrity and vertical tension of the palate.

Organoleptic Characteristics

Visually, it presents an intense, golden straw-yellow colour, enhanced by a very fine, lively perlage. The bouquet is a fascinating interplay of freshness and maturity: fragrant notes of candied citrus and apple pulp blend with developed hints of dried fruit, brioche and a distinct chalky minerality. On the palate, ‘Jouvence’ surprises with its dynamism; the attack is clean and vibrant, followed by a broad and deep progression that reveals a rich texture perfectly balanced by a sharp, savoury freshness.

Occasion and Pairing

Thanks to its balance and vigour, it is an extremely versatile Champagne at the table. It is perfect for accompanying flavourful seafood dishes such as a white fish soup or grilled shellfish, but its structure also allows it to hold its own admirably with delicate white meats and medium-aged soft cheeses. It is the ideal choice for those seeking an artisanal sparkling wine capable of combining power with a light, refreshing drinkability.

Frank Cornelissen is one of the most iconic and visionary estates in Etna’s viticulture, a synonym for purity, experimentation, and absolute respect for nature. Founded in the early 2000s by the Belgian-born winemaker of the same name, the estate was created with the goal of expressing Etna in its most authentic and primordial form, free from technical manipulation or compromise. Cornelissen’s philosophy is rooted in the belief that wine should be a direct expression of its land and vintage, a living and evolving entity that tells the soul of a unique place. The vineyards are located on the northern slopes of Mount Etna, between the villages of Solicchiata and Randazzo, at altitudes ranging from 600 to 1,000 meters above sea level. Here, on volcanic soils rich in minerals and microelements, wines of remarkable energy and personality are born, wines that balance the raw power of the volcano with the delicate touch of human care. Many of the vines, some over a century old, are trained in the traditional alberello system and cultivated through natural farming practices, with no chemical inputs and minimal intervention both in the vineyard and in the cellar. Vinification follows spontaneous fermentations, no clarification or filtration, and a very limited use of sulfur. Each wine is the result of an uncompromising pursuit of purity and harmony between substance and place. Among the key grape varieties are Nerello Mascalese and Nerello Cappuccio for the reds, Carricante and Grecanico Dorato for the whites, interpreted in a distinctive and radical style. The result is deep, vibrant, and authentic wines that embody both the strength and fragility of Etna, capable of stirring emotion and challenging convention.
