Production

The Quintette is the Champagne Extra Brut Blanc de Blancs by JM Sélèque, a cuvée that tells the identity of the terroirs of the Vallée de la Marne through the purity of Chardonnay. It is born from 100% Chardonnay grapes from five different plots, processed with an artisanal approach aimed at enhancing the expression of the soil and the thousandth. Parcellar winemaking, prolonged aging, and low Extra Brut dosage provide balance, complexity, and great precision.

Organoleptic Characteristics

On the nose there are elegant notes of citrus, crunchy apple and white fruit, accompanied by floral, mineral and delicate pastry nuances. On the palate it is refined and dynamic, with a beautiful acidic tension, a creamy texture and a long, savoury closure that recalls the minerality of the terroir.

Occasion and Pairing

Perfect as a sought-after aperitif, it pairs naturally with oysters, shellfish, raw fish and carpaccio. Also excellent with delicate seafood dishes, risottos and fresh soft cheeses.

Jacques Lassaigne is one of the most iconic and visionary realities of the new artisanal Champagne, symbol of purity, expressiveness and deep respect for the terroir. Based in Montgueux, in the Troyes region, the house represents one of the most distinctive and personal interpretations of Chardonnay in Champagne, through wines that reflect with extraordinary clarity the chalky and luminous nature of this unique cru. The philosophy of Jacques Lassaigne is based on a radically territorial and artisanal approach, in which the vineyard is considered the only true starting point. Vineyards are grown according to organic practices, with great attention to soil balance and plant vitality, without resorting to invasive interventions. The goal is to obtain grapes capable of transparently expressing the singularity of Montgueux, often defined “the Cote des Blancs outside the Cote des Blancs”. The plots are located on soils very rich in gypsum, which give the wines extraordinary mineral tension, verticality and an almost saline luminosity. The Chardonnay is the absolute protagonist, played in a pure, energetic and vibrant style, capable of combining expressive immediacy and great depth. In the cellar, the work follows a minimal and intuitive approach: spontaneous fermentations, reduced use of wood and long refinements on the yeasts allow the wines to develop complexity without losing freshness and precision. Dosages are generally very low or absent, a choice that values the purity of the fruit and the strong identity of the terroir. Jacques Lassaigne Champagnes are distinguished by a tense, luminous and deeply mineral style, characterized by energy, finesse and great personality. Each cuvée tells the story of Montgueux in its most authentic and immediate form, with wines capable of surprising with intensity and expressive purity.
