This collaboration reflects the avant-garde spirit of Dom Pérignon, celebrating Basquiat's creative energy. The vinification of Dom Pérignon 2015 follows a traditional method, with careful attention to each phase. After manual harvesting, the grapes are gently pressed to extract the purest aromas. Fermentation takes place at low temperatures, preserving the finesse of the aromas and the wine's freshness. The Champagne is dosed as brut to maintain balance and structure, benefiting from prolonged aging in the cellars of Dom Pérignon, leading to its perfect maturity. This patience in crafting is essential for the aromatic richness and depth of the 2015 Vintage. Dom Pérignon Vintage 2015 presents a golden color with bright reflections and fine, persistent bubbles, a sign of its elegance and maturity. On the nose, it is complex and intense, revealing aromas of exotic fruits, white flowers, and a subtle mineral note. Toasted bread and spice notes add further depth to this cuvée. On the palate, the attack is fresh and ample, with perfectly balanced structure. Flavors of ripe fruits and citrus intertwine with hazelnut notes and a hint of spice in the finish. The persistence is remarkable, leaving an impression of finesse and power. It pairs perfectly with refined dishes such as dill salmon tartare and ginger tuna sashimi. It is also ideal with caviar blinis and sour cream, as well as grilled lobster with lemon butter. For meat dishes, veal tenderloin with porcini mushrooms and truffle risotto are excellent choices.
