TASTING NOTES

Dom Pérignon Plénitude 2 is a vintage that comes from a selection of the best grapes with 48% Pinot Noir and 52% Chardonnay. Dom Pérignon excludes the possibility of creating a Vintage at a time when the vintage is not of good quality. The grapes are carefully selected in the vineyard and harvested by hand in small crates. The bunches, taken to the cellar as quickly as possible to prevent bacteria attacks, are then pressed directly and fermented in stainless steel containers at controlled temperature for a few weeks, in order to obtain the base wine of the vintage. It proceeds with the addition of the liquer de tirage for the fermentation and subsequent refermentation in the bottle, remaining in aging on its lees for almost 15 years before making the disgorgement and recoating with the addition of liquer d'expedition, as seen in the Brut version. P2 is outlined with hints of pink grapefruit and red orange, leaving room for the fig on the finish. The further aging on the lees sublimates the minerality of this Millesimo in a glorious maturity on the palate, with aromas of cocoa, roasted coffee, brioche and honey. In a game of balance, wine evolves between tension and lightness. Extreme precision, tactile, mysterious and chiseled. A character that persists, elegant, on a powerful note of licorice. Dom Pérignon Vintage Plénitude 2 offers a fascinating combination of recipes and ingredients. Its charm makes it elegant in combination with veal and dashi broth. Champagne P2 is tactile: a green tomato sorbet will enhance its silky and creamy character. This wine also shows a balanced tension: a facet to explore with toasted pineapple, candied citrus peel and anise.
