TASTING NOTES

Production

Clandestin’s Champagne Brut Nature Trilogie Km3 is made from grapes grown in the Côte des Bar, cultivated using sustainable methods that respect the terroir. Vinification involves spontaneous fermentation and minimal intervention in the cellar, to preserve authenticity and terroir identity. The second fermentation follows the Méthode Champenoise, with ageing on the lees and a Brut Nature dosage, with no added sugar, which enhances its purity and mineral tension.

Organoleptic Characteristics

Bright straw-yellow in colour with a fine, persistent perlage. On the nose, it opens with notes of citrus, green apple and white fruit, accompanied by hints of bread crust, aromatic herbs and light chalky nuances. On the palate, it is fresh and upright, with great savouriness, balance and a dry, long and refined finish.

Occasion and Pairing

An elegant and gastronomic Champagne, ideal as a high-class aperitif or paired with oysters, raw seafood, shellfish and delicate fish dishes.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 8–10°C.

Allergens: Solfiti

THE WINERY

Clandestin

The story of the Cocchi company is actually a very romantic one: it seems that its founder moved to the Asti area for love. And it was here, and thanks also to his passion for the terroir, that he began producing Vermouth following various personal recipes, experimenting and increasingly trying to expand his knowledge and techniques. As time went by, straddling the Belle Epoque and Futurism periods, Cocchi Vermouth experienced a golden age and established itself as one of the best-selling Italian products in the world. Even today, the traditional commitment to the production of Vermouth is complemented by modern techniques, innovations and new productions. For example, the company has launched a sparkling wine project in Alta Langa, where classic method sparkling wines are produced under the Cocchi brand. This passionate and constant work has been going on for decades, so that you can enjoy only the very best of Piedmontese wines. Name and address of producer/distributor: Cocchi- Via E. Liprandi, 21, 14023 Cocconato AT. Products from this winery should be stored in a cool, dry place away from heat sources.
