Owned by the Antinori family, the Apulian Tormaresca winery is run by the Tuscan family in the Castel del Monte DOC area. The vineyards grow around 300 metres above sea level in Murgia, an area characterised by unique climatic and environmental conditions. Pietrabianca Chardonnay Castel del Monte DOC is an organic wine made from Chardonnay and Fiano grapes, which are vinified separately. The grapes are harvested in the early hours of the morning, to avoid oxidation. Subsequently, they are de-stemmed and softly pressed and vinified in steel tanks to obtain natural clarification. The Chardonnay grapes undergo alcoholic and malolactic fermentation and ageing in French oak barriques. Fiano, on the other hand, ferments only in stainless steel to maintain its freshness. At the end of the vinification processes, the two wines are blended together and bottled a few months later. The wine is refined in the bottle before being sold. Pietrabianca Castel del Monte has a bright yellow colour with greenish reflections with notes of yellow peach, grapefruit, exotic fruits, jasmine, lavender and light toasted and vanilla nuances. Elegant and fresh, Chardonnay Pietrabianca has a pleasant minerality. Perfect paired with raw fish appetisers, steak tartare or fish stew.
