TASTING NOTES

The fermentations take place in stainless steel and cement tanks, using spontaneous yeasts to allow the most natural expression of the wine. At the beginning of the process, two daily pump-overs are carried out, which are then reduced according to the extraction progress. The maceration duration is decided through frequent tastings, allowing the winemaker to monitor the wine’s evolution. After the malolactic fermentation, which naturally occurs in November, the various wines are blended and begin their aging process. This lasts for 12 months, during which part of the wine matures in 30 hl cement vats, while the other part rests in second- and third-passage barriques. The wine has excellent aging potential, with a lifespan of up to 10 years, during which it will continue to evolve and refine. Visually, the wine presents a dark ruby color, enhanced by subtle garnet reflections that emphasize its depth. The aromatic profile is rich and intense, with aromas of black currant, marasca cherry, blueberry, blackberry, and ripe cherry, intertwined with notes of underbrush and humus. Additionally, there are herbaceous hints typical of the Mediterranean scrub, as well as tobacco, leather, and delicate spicy nuances that further enrich the bouquet. On the palate, the wine is harmonious and well-structured, with a mature and velvety tannic texture that envelops the mouth. Its aromatic complexity is felt in all its breadth, while maintaining a vital freshness that expresses itself in a fresh and persistent finish, leaving a pleasant and lasting aftertaste. Perfect for pairing with pasta dishes with meat sauces, roasted and grilled meats, braised red meats, game, and aged cheeses, this wine is ideal for rich and flavorful dishes that enhance its structure and complexity. THE WINERY

Michele Satta

The winery Michele Satta is one of the most representative of the area of Bolgheri, but its birth happened in a completely random way. In 1974, Michele Satta, a student of Agriculture at the University of Milan, was on holiday on the Tuscan coast, near Castagneto Carducci. During this stay, he met the owner of a farm who offered him an internship during the harvest. This is how his passion for viticulture was born. After graduation, Michele started looking for land to rent to start a wine business and found old vineyards with an adjoining cellar, which became the basis for an adventure that would lead him to produce some of the best known labels in Bolgheri. The project was officially launched in 1983, one year before the creation of the DOC Bolgheri. Towards the end of the 80s, Michele bought his first land and planted his first vineyard in areas he considered particularly suitable, also starting the construction of the cellar. During this period, he undertook several trips to the main wine regions of the world, which enriched his experience and expanded his knowledge. Today, the winery covers 23 hectares of land, with an annual production of about 150,000 bottles.
