TASTING NOTES

Fermentation takes place in Austrian wooden vats made by Stockinger, using the highest quality wood without toasting, in order to preserve the intrinsic qualities of the must. Subsequently, the wine undergoes a period of aging in wooden barrels of various sizes and ages. It presents a pale garnet red color, enriched by ruby reflections and enviable transparency. On the nose, it offers great strength and aromatic complexity, opening with fragrances of red fruits like cherries and plums, accompanied by notes of withered flowers, spices, tobacco, and a slight minerality. With aeration, hints of leather and wet earth also emerge. On the palate, the wine is full-bodied and structured, with present yet silky tannins. The freshness is well-balanced by good acidity, which provides equilibrium. The flavors reflect the aromatic bouquet, offering long persistence and complexity that evolves over time. It pairs beautifully with red meat dishes, braises, game, and aged cheeses, and is also ideal to enjoy on its own to appreciate all its nuances.
