TASTING NOTES

Production

The harvest, carried out by hand with careful selection of the bunches, is followed by gentle crushing and destemming. Traditional vinification is followed by maceration for at least 20 days with gentle punching down and bâtonnage. Ageing takes place first in small, high-quality barrels for at least 24 months, then in the bottle.

Organoleptic Characteristics

On the nose, it is complex and intense, with pronounced balsamic, spicy and ripe red fruit notes. On the palate, it is austere and vertical, highlighting the character of the cru. It is a long and persistent wine that needs time to reveal its full potential.

Occasion and Pairing

It is the ideal wine to pair with truffle risotto and stewed game. Try it with a platter of cured meats.

To fully appreciate its style, this wine should be served at a temperature of 16–17°C.
