TASTING NOTES

Production

Spontaneous fermentation without added yeasts in concrete tanks for approximately 12 days, followed by submerged cap maceration. After racking, malolactic fermentation begins, followed by ageing in Slavonian oak barrels for 4 years, followed by a further 6 months of bottle ageing. This Barolo is a blend of the five Barolo Cru vineyards: Liste, Cannubi, Fossati, Cannubi San Lorenzo and San Pietro delle Viole. As such, it embodies both the elegance and power typical of Barolo from Barolo and the authentic Barolo of yesteryear.

Organoleptic Characteristics

Ruby red with garnet highlights. On the nose, hints of red fruit and spicy notes. Pleasant acidity that brings freshness. Fine, smooth tannins.

Occasion and Pairing

The quintessential Barolo pairs well with substantial dishes, such as traditional Piedmontese meat main courses. Looking across global traditions, we find goulash in Eastern Europe. In Japan, we might think of gyoza; grilled meats such as beef; or why not fish, such as Black Cod. But if you fancy it, even a simple ‘special’ toast is perfect!

THE WINERY

Borgogno

Since 1761, Borgogno is the most historic winery of Barolo. Even today the underground cellars represent a rare historical memory of Langa and the wines are produced according to tradition: long spontaneous fermentation without the use of selected yeasts in cement tanks and long aging in large Slavonian oak barrels. The fermentation practices have remained the same for many decades and over the years have been refined winemaking techniques that allow to have live wines, real and clean, different from year to year as they respect the characteristics of the vintage and always with the unmistakable Borgogno imprint, given by the long aging. Borgogno cultivates vineyards in Barolo, Madonna di Como and in the Colli Tortonesi, in full respect of the land, avoiding the use of chemical fertilizers, herbicides and practicing sustainable treatments. Since 2016, the company has been certified in organic farming, continuing to work in full respect of nature and the ecosystem, as a true expression of a territory, a tradition, a history, but always with an eye to the future.
