The production of Barolo Castiglione Falletto by Cascina Fontana follows traditional and meticulous methods to ensure a high-quality wine that expresses the unique terroir of the area. After harvest, the grapes ferment in stainless steel, and following maceration, the wine is transferred to oak barrels where it undergoes malolactic fermentation, which reduces acidity and imparts greater smoothness to the wine. Aging occurs in Slavonian oak barrels or French barriques for a period ranging from 24 to 36 months. During this time, the wine matures, developing complexity and integrating its tannins.
Barolo Falletto presents a deep garnet red color with orange reflections, typical of aged Nebbiolo. The bouquet is complex and enveloping, with notes of ripe red fruits like cherry and raspberry, complemented by floral hints of rose and violet. Tertiary aromas of sweet spices, tobacco, licorice, leather, and a balsamic touch of menthol emerge as well. On the palate, it is structured and harmonious, with fine, well-integrated tannins. The acidity's freshness is balanced by the richness of the fruit and the complexity of the tertiary notes. It has a long finish, with a lingering aftertaste that recalls the fruity and spicy notes perceived on the nose.
Ideal with red meat dishes, game, braised meats, and stews. It also pairs excellently with aged cheeses and truffles.
