TASTING NOTES

Production

Barolo Cannubi is made from 100% Nebbiolo grapes, known for its rigor, class, and power. The harvest is done manually to preserve the integrity of the fruit and to allow for further selection in the cellar. The grapes are destemmed, and the must is transferred by gravity into open French oak vats where alcoholic fermentation takes place. During maceration, daily pump-overs and punch-downs are performed to ensure better extraction of color and aromas. The malolactic fermentation follows, and the wine then matures in large French oak barrels for a period ranging from 20 to 36 months, depending on the vintage. Bottling is done without any clarification or filtration, and the wine rests in the cellar for at least 9 months before being released for sale.

Organoleptic Characteristics

Barolo Cannubi appears in the glass with a delicate garnet red color. On the nose, it is elegant, offering scents of withered flowers and sweet spices that evolve from rose to violet, with hints of nutmeg, cardamom, and licorice. On the palate, fruity aromas of cherry, jam, and red citrus emerge, creating a harmonious and refined experience.

Occasion and Pairing

Perfect to be enjoyed on its own, it is also ideal when paired with roasted pigeon stuffed with truffle.

To fully appreciate its style, this wine should be served at a temperature of 16-18°C.

THE WINERY

Burlotto

A historic estate active since the second half of the 19th century on the hills of Verduno, one of the most distinctive municipalities in the Barolo area. After the death of the founder Giovan Battista, the winery passed into the hands of his son Francesco and then to his son Ignazio. Courageous and far-sighted, Ignazio found himself having to carry on the company alone during the hardest period, that of the war. He was also the only one left to make monovarietal Pelaverga grapes, growing them himself and buying small quantities from neighbouring farmers. If Verduno Pelaverga still exists, and is the shining jewel that it is, it is due in no small part to Ignazio Burlotto, who passed away in 1968, the year the winery passed to his daughter. Marina and her husband and children therefore represent the fourth and fifth generations at the helm of the company, which today continues to produce the classic wines of the Langa of Alba.
