Production

The Barolo DOCG by Fratelli Revello is a pure and complex wine, where the maceration on the skins takes place in horizontal rotomacerators, and fermentation occurs in stainless steel tanks for about 10 to 15 days, followed by malolactic fermentation in steel. The aging takes place in used French oak barriques for 24 months, followed by further bottle aging for about 4 years.

Organoleptic Characteristics

With a refined aromatic profile, all in purity: a fruity dimension of currants and raspberries accompanies notes of red and violet flowers, such as rose and violet, followed by a delicate and continuous touch of herbal and spicy notes. A sip that unfolds perfectly around a character balancing acidity and saltiness with subtle mineral hints. Nervous tension and legendary persistence make this sip unforgettable!

Occasion and Pairing

To be kept in the cellar for a few years. Ideal with bruschetta topped with truffle and caciocavallo cheese, bucatini with Ischian rabbit sauce, or lamb with potatoes.

THE WINERY

Fratelli Revello

Two generations compared. The Revello family history began in 1945, in the early post-war period with Giovanni Revello, Caterina Tezzo and their children, Ercole, Maria and Giacomo Revello in the Annunziata hamlet of La Morra. Today, the company is led by the third generation with their grandchildren joining the company. The production philosophy of Fratelli Revello wines stems from the assumption that a great wine comes from a great vineyard, and for this reason they take care of the vineyards themselves with continuous respect for nature. For many years now, the Revello family has decided to adopt sustainable farming practices, carrying out a few targeted sulphur and copper-based treatments, abandoning the use of herbicides and chemical insecticides for good. The approach to vinification is modern: temperature-controlled maceration with indigenous yeasts, alcoholic fermentation in vertical stainless steel, malolactic fermentation and ageing in barriques. By choice, no filtration or clarification is carried out on the wines, so as to preserve the organoleptic characteristics derived from the grape itself and maintain all its nuances.
