TASTING NOTES

The harvest, which is strictly hand-picked, is followed by a long appassimento (drying process) of the grapes, which are left to dry on racks for a period ranging from 4 to 5 months, depending on the climatic conditions. This natural drying process concentrates the sugars and polyphenols, which are essential for developing the complexity and structure typical of Amarone. After the appassimento, the grapes are gently pressed and undergo spontaneous fermentation with indigenous yeasts. The fermentation takes place in stainless steel tanks at controlled temperatures. The wine then undergoes malolactic fermentation in wooden barrels, and it matures for approximately 7 years in Slavonian oak barrels of 25-30 hectoliters. This long aging process contributes to developing the complexity and structure that distinguish Quintarelli’s Amarone Riserva. The color of the 2015 Amarone della Valpolicella Classico Riserva is an intense ruby red with garnet reflections that evolve over time. On the nose, the wine is rich and complex, with an extraordinarily deep bouquet. Notes of ripe fruit such as plum, cherry in brandy, and amarena are enriched with spicy hints of black pepper, cocoa, tobacco, and a delicate trace of licorice. With aeration, more evolved notes of leather, mint, and a slight touch of truffle emerge, reflecting the wine’s development in the bottle. On the palate, the Amarone Riserva by Quintarelli is of great structure: enveloping, powerful, but at the same time incredibly elegant. The tannins are soft, velvety, and perfectly integrated, giving the wine a fullness and finesse that make it extraordinarily pleasant and balanced. The body is rich and dense, with a long finish characterized by a fresh and vibrant minerality, which provides a sense of great balance despite the richness of the wine. The Amarone della Valpolicella Classico Riserva 2015 pairs magnificently with rich and structured dishes. It is ideal with braised or stewed red meats, such as beef braised in wine or filet mignon with black pepper, which enhance the wine’s complexity. It is also perfect with game meats like wild boar, pheasant, or venison, which bring out the wine’s spicy notes and powerful body. The Amarone Riserva is also an excellent companion to dishes with porcini mushrooms, truffle, or parmigiana risotto, which highlight its elegance. Furthermore, it is sublime with aged cheeses like pecorino, castelmagno, or grana padano, which complement its complex and refined structure. This Amarone is a wine perfect for special occasions and moments of great celebration: weddings, anniversaries, gala dinners, or any event that calls for a wine of great class and significance. It is also an ideal meditation wine, offering a unique sensory experience that evolves over time. The company Quintodecimo represents a reality of quality reference of the entire panorama of wines from Campania. The name is a tribute to the ancient history of Mirabella Eclan, during the struggles between the Lombards and the Byzantines, destroyed by the Greek army of Constans II and called Quintum decimum because it is exactly 15 miles from ancient Benevento. Between the tenth and the eleventh century, the town moved on the ridge of the current hill, taking the name of Mirabella Eclano. Luigi Moio, after studying wine research in Burgundy, returned to Italy in the mid-nineties and from 2001, together with his wife Laura, he started the Quintodecimo company. The idea was to create wines that combine human wisdom and technique to a territory of excellence such as Irpinia.
