Production

The finest Corvina, Corvinone and Rondinella grapes are left to dry after harvesting. This technique gives the wine great concentration and a bouquet of great intensity. This is followed by alcoholic fermentation and ageing for 36 months in oak barrels and 8 months in the bottle.

Organoleptic Characteristics

In the glass, the Amarone Classico is an intense ruby red with garnet highlights, refined on the nose with fruity notes of black cherries and prunes. These are followed by spicy notes, derived from the ageing in wood. On the palate, it is deeply complex, substantial, full-bodied and opulent, yet with a good dose of freshness that provides balance and extends its lingering finish.

Occasion and Pairing

Enjoy with red meat and game dishes or with blue-veined cheeses. Also perfect for savouring on its own on cold winter evenings.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

THE WINERY

Ca' La Bionda

In the heart of the historic Valpolicella Classico area, in the municipality of Marano di Valpolicella, lies the Ca' La Bionda winery. Founded in 1902 by Pietro Castellani who always had a great passion for the cultivation of his vines and the vinification of his grapes, the estate covers an area of 29 hectares in the hills, on clay soil at an altitude of between 150 and 300 metres, and with a south-eastern exposure, a favourable position for ripening grapes. The quality of the wines is the result of a family tradition in which passion and sacrifice have gone hand in hand. For more than four generations, the winegrowers and winemakers of the company have dedicated themselves to the processes of cultivating, harvesting, vinification and marketing of Ca' la Bionda products, paying particular attention to the phases of natural drying of the grapes destined for the great wines: Recioto and Amarone, and subsequent ageing in special oak barrels. In the vineyard owned by Piero Castellani, current owner and namesake of the founder, no herbicides or chemical fertilisers are used, and dry stone walls have been restored to create terraces favourable to good maturation of the grapes for the creation of fine red wines from the Veneto region.
