Fermentation takes place in stainless steel, and malolactic fermentation is carried out in large wooden barrels. In the glass, it presents a beautiful, very lively ruby red colour, immediately surprising with prominent fruity notes of blueberry and cherry. Energy value per 100 ml: E=321 kJ/77 kcal
Pinot Noir retains the typical elegance of the grape variety, thanks to the integrity of its fruity notes, complemented by the minerality characteristic of wines from the Dolomites. The use of large barrels does not alter the wine’s characteristics but adds hints of liquorice that accentuate the fruity notes.
Pinot Noir does not require specific occasions to be enjoyed; on the contrary, it enhances any occasion. It pairs best with red meats, but it is by no means out of place as an aperitif with a fine platter of traditional cured meats or with a vegetable or mushroom risotto.
To fully appreciate its style, this wine should be served at a temperature of 12–14°C.
