The Blanc de Noir Dosaggio Zero Bio is an exceptionally precise and generous expression of Pinot Noir, vinified as a single varietal. After primary fermentation, the wine matures until June, then undergoes secondary fermentation in the bottle, spending over four years on the lees. Following a manual riddling process lasting around four weeks, the wine is disgorged without the addition of liqueur de dosage, except for the wine itself, creating a Dosaggio Zero of incredible structure. In the glass, it is a golden yellow colour with a fine, persistent effervescence. Initially, it offers an intense aroma of white fruit, mint and fresh flowers, before opening up to reveal notes of red fruit and a hint of smokiness.
Its surprising persistence, combined with incredible freshness, make this wine an excellent accompaniment throughout a meal. It is particularly well-suited to fish and shellfish dishes.
To fully appreciate its style, this wine should be served at a temperature of 10–12°C.
